Chinese-Style Duck Breast
With the lunar new year fast approaching, there’s no better time to make this crispy and juicy marinated duck breast. We cooked ours in the air fryer but if you don’t have one you can use an oven and allow an extra 5 minutes for each stage of the cooking process.

What do I need?
- 2 duck breasts, skin on
- 4 tbsp oyster sauce
- 5 tbsp soy sauce
- 1 ½ tbsp Chinese five spice, divided
- 4 tbsp honey, divided
- 2 ½ tbsp minced garlic
- 4 tbsp warm water
How do I make it?
- Using paper towel, pat the duck breasts to remove as much moisture as possible, paying particular attention to the skin.
- Mix oyster sauce, soy sauce, half the five spice, half the honey and 2 ½ tbsp garlic together in a medium sized bowl. Add duck breast, skin side up, ensuring that the skin is not in the sauce (you want to keep the skin as dry as possible for maximum crispness). Place bowl in the fridge overnight to marinate.
- Add duck breasts to air fryer skin side up. Pat the skin with paper towel again to dry. Cook for 18 minutes on 140C. In a small bowl, mix remaining honey and five spice with 4 tbsp warm water and brush over the duck breast. Return to air fryer and cook at 200C for 12 minutes or until the skin is crisp and golden brown.
