Chicken Pineapple Curry
This one-pan curry is quick and easy to make, in fact you’ll have dinner on the table in under 30 minutes.

What do I need?
- 1 tsp olive oil
- 450 g chicken breast, boneless and skinless, diced
- 400 mL coconut milk
- 400 mL coconut cream
- 2 tbsp red curry paste
- 1 tbsp curry powder
- 1 tsp ground ginger
- 1 clove garlic, minced
- 400 g pineapple, cut into chunks
How do I make it?
- Add olive oil to a large deep-walled frying pan over high heat. Add chicken and brown on all sides, then reduce heat to medium.
- Add coconut milk, coconut cream, curry paste, curry powder, ginger, and garlic and cook for 15 minutes, stirring often.
- Add pineapple pieces and cook for a further 5 minutes.
- Serve with rice.
