Watching your carb intake? These lettuce-wrapped tacos are a fab way to enjoy all your favourite taco flavours without the extra carbs from tortillas or hard taco shells.

1 lettuce, iceberg or cos
1 tbsp olive oil
1 kg green prawns, peeled, deveined and heads and tails removed
2 cloves garlic, minced
2-centimetre piece of ginger, grated
¾ tsp chilli flakes
1 tbsp white wine vinegar
Juice and zest of 1 lime
2 tbsp honey
1 tbsp sriracha
1 avocado, diced
½ punnet cherry tomatoes, halved
How do I make it?
Divide lettuce leaves, wash and dry, and set aside.
Heat oil in a frying pan over medium-high heat. Add prawns and cook until they begin to change colour, then add garlic, ginger, and chilli flakes and stir well. Cook for 1 minute, then add white wine vinegar, lime zest, honey, and sriracha. Cook, stirring frequently for 1 to 2 minutes.
Dice avocado and dress with lime juice.
Arrange prawns, avocado, and tomatoes in lettuce cups and serve.
