Sweet and Spicy Prawn Lettuce Tacos

What do I need?
- 1 lettuce, iceberg or cos
- 1 tbsp olive oil
- 1 kg green prawns, peeled, deveined and heads and tails removed
- 2 cloves garlic, minced
- 2-centimetre piece of ginger, grated
- ¾ tsp chilli flakes
- 1 tbsp white wine vinegar
- Juice and zest of 1 lime
- 2 tbsp honey
- 1 tbsp sriracha
- 1 avocado, diced
- ½ punnet cherry tomatoes, halved
How do I make it?
- Divide lettuce leaves, wash and dry, and set aside.
- Heat oil in a frying pan over medium-high heat. Add prawns and cook until they begin to change colour, then add garlic, ginger, and chilli flakes and stir well. Cook for 1 minute, then add white wine vinegar, lime zest, honey, and sriracha. Cook, stirring frequently for 1 to 2 minutes.
- Dice avocado and dress with lime juice.
- Arrange prawns, avocado, and tomatoes in lettuce cups and serve.
