Spice Rubbed Salmon with Peach Salsa
Take advantage of stonefruit season with this fresh, light and summery meal. It’s the perfect combination of sweet and spicy and is amazingly quick and easy to make.

What do I need?
- 4 x 200g pieces of salmon, skin on
- 1 ½ tbsp olive oil
For the Spice Rub
- Pinch of pepper
- ¼ tsp salt
- Pinch of cayenne pepper
- ¼ tsp garlic powder
- ¼ tsp chilli powder
- ½ tsp onion powder
- ½ tsp paprika
- 1 tsp cumin
For the Peach Salsa
- 4 large ripe peaches
- 1 avocado
- 1 birdseye chilli
- ½ small red onion
- 4 tbsp coriander
- Juice of 1 lime
- Salt and pepper to taste
How do I make it?
- Dice peaches and avocado and finely chop the coriander, chilli and red onion. Add to a bowl along with the lime juice and season to taste. Set aside while you cook the salmon.
- Mix all Spice Rub ingredients together in a small bowl.
- Pat salmon dry with paper towel. Sprinkle Spice Rub over salmon and rub into both sides of the fish.
- Heat olive oil in a large frying pan over medium-high heat. When oil is hot, add salmon skin-side down and cook for 3-4 minutes, then turn and cook for a further 2-3 minutes or until cooked to your liking.
- To serve, place salmon on plates and top with salsa.
