Sticky Beef Noodles with Sesame Mushrooms
With our busy lives meals that serve double-duty are always a great idea. This Sticky Beef Noodles with Sesame Mushrooms only takes 30 minutes to prepare and you’ll get two meals from it. Enjoy the stir-fried beef in lettuce cups for dinner and transform it into a noodle salad for lunch the next day.

What do I need?
- 80ml sunflower or peanut oil
- 350g small Swiss brown mushrooms
- 2 tsp sesame oil
- 60ml dark soy sauce
- 2 tsp sesame seeds
- 750g beef mince
- 3 garlic cloves, crushed
- 1 ½ tbs grated ginger
- 60ml honey
- 1 tbs fish sauce
- Juice of 1 lime
- 2 bunches broccolini, chopped and blanched
- Lettuce cups to serve (for dinner)
- ½ bunch spring onions, thinly sliced
- 150g egg noodles, cooked and cooled
How do I make it?
- Heat 2 tbs oil in a large frying pan over medium-high heat. Add the mushrooms and cook 3-4 minutes until browned, then add sesame oil and 1tbs soy and toss to coat.
- Add sesame seeds and cook, tossing for a further 1-2 minutes, then set aside.
- Wipe pan clean and heat remaining oil.
- Cook mince, stirring, for 5-6 minutes until browned.
- Add the garlic and ginger and cook for 1 minute.
- Add honey, remaining soy, fish sauce, lime juice and ½ cup water. Reduce heat to medium and cook, stirring occasionally, for 10 minutes or until sauce is reduced and mince is starting to caramelise.
- Toss through the broccolini.
- Reserve a third of the mixture and a third of the mushrooms for lunch, then serve remaining in lettuce cups topped with two-thirds of the spring onions for dinner.
- For lunch, combine reserved mince and mushrooms with the noodles and top with remaining spring onions.
