Thai Basil Fried Rice with Prawns
If you’re looking for a super-fast and super-easy midweek meal then this Thai Basil Fried Rice is the answer. We have used prawns but you could use chicken, beef, pork, or any protein you like.

What do I need?
- 4 cloves garlic
- 2 red chilli, seeds removed
- 1 medium shallot
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp honey
- ¼ tsp white pepper
- 2 tbsp unsalted butter
- 20 green prawns, peeled and deveined
- 2 eggs
- 2 ½ cups cold cooked jasmine rice
- Handful of Thai basil
- 1 ½ cups cooked green beans
How do I make it?
- Add garlic and chilli to a food processor and blitz. Slice shallot and add to the garlic and chilli.
- Combine oyster and fish sauces with honey in a small bowl and set aside.
- Heat a large wok or frying pan over high heat until smoking. Add butter, garlic, chilli and shallot mixture and prawns. Cook, stirring constantly for 2 minutes, then add eggs and cook, stirring constantly for a further 1 minute.
- Add rice and combined sauces and honey mixture and toss to coat the rice with the sauce. Continue stirring and cooking for 2 minutes, or until the rice is hot. Add basil and beans and turn off the heat. Stir or toss well to combine, then serve.
