Carrot and Goat Cheese Fritters
One of the things we love about these fritters, apart from their delicious taste, is how versatile they are. Enjoy them with a simple salad for lunch, try them accompanied with fresh vegetables for dinner, or top them with a poached egg for a weekend brunch.

What do I need?
- 500 g carrots
- 1 small brown onion
- 1 bunch coriander
- 1 tsp coriander seeds, crushed
- 150 g goat’s cheese
- 2 eggs
- 75 g plain flour
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- Olive oil, for frying
How do I make it?
- Grate carrots and onion into a large bowl. Chop coriander leaves and stalks and add to bowl, along with coriander seeds, goat’s cheese, eggs, flour, salt and pepper. Mix well and then use your hands to shape into round patties.
- Heat 1 tablespoon olive oil in a frying pan over medium heat and add some fritters ensuring that you don’t overcrowd the pan. Cook for 3 minutes, then flip and cook for a further 3 minutes or until both sides are golden. Remove from pan and place on a plate lined with paper towel. Repeat for remaining mixture.
- Serve warm with salad.
