Rosemary Beef Tenderloin
Tender and full of flavour, this beef tenderloin is an easy-to-make main course. Serve with you favourite vegetables or salad.

What do I need?
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 2 kg beef tenderloin
How do I make it?
- Preheat oven to 190C.
- Lightly spray a roasting dish with cooking spray.
- Combine olive oil, garlic, rosemary, salt and pepper in a small bowl.
- Pat beef with paper towel to remove excess moisture, then spoon rosemary mix over and use your hands to push the mix onto the beef.
- Place beef into roasting dish and cook for 1 ¼ hours, then remove from the oven, cover and allow to rest for 15 minutes before slicing.
TOP TIPS
- You can prepare the beef the night before you want to eat it by covering it with the rosemary mixture and storing in the fridge.
- This beef is also delicious cold. If you want to serve it cold you can cook it up to 2 days in advance and store unsliced in the fridge.
