What do I need?
- 500 g spaghetti
- 350 g butternut pumpkin, peeled and cut into 1-centimetre cubes
- 1 tbsp olive oil
- 1 brown onion, finely diced
- 2 garlic cloves, minced
- 1 carrot, finely diced
- 1 stalk celery, finely diced
- 1 tsp dried oregano
- 500 g beef mince
- 4 tbsp tomato paste
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- Cook spaghetti according to directions on the pack. Drain and set aside. Reserve pasta water for later.
- Meanwhile bring a large saucepan of water to the boil over high heat. Add pumpkin and cook until tender, then drain and set aside.
- In a large frying pan over medium heat add olive oil, onion, garlic, carrot, celery, and oregano. Cook for 5 minutes, or until the vegetables are tender.
- Add mince to the frying pan and cook until browned, then add tomato paste and ½ cup reserved pasta water. Cook for 5 minutes, then add pumpkin and another ½ cup pasta water. Reduce heat to low and allow to simmer for 3 minutes. Add drained spaghetti to the pan and toss to combine.
