Beef Schnitzel Neapolitan
An excellent, speedy mid-week dinner option featuring tasty beef schnitzels dressed with tomato, cheese, ham and olives.

What do I need?
- 1/3 cup vegetable oil
- 4 beef schnitzels
- ½ cup tomato paste
- 1 clove garlic, minced
- Pinch of dried oregano
- 4 slices ham, finely sliced
- 1 cup grated mozzarella cheese
- ¾ cup sliced black olives
How do I make it?
- Heat oil in a heavy based frying pan and cook schnitzels for 3 minutes per side or until golden brown. Place schnitzels on a lined baking tray and turn on oven grill.
- Mix tomato paste, garlic and oregano in a small bowl.
- Top each schnitzel with tomato paste mixture, ham, cheese and olives and place under the grill until the cheese has melted and is bubbly.
- Serve with your choice of side.
