Minced Chicken Pie
Budget-friendly chicken mince and vegetables combine to make this easy, but tasty chicken pie. It reheats well so make extra and that you’ll have some for lunch the next day.

What do I need?
- 2 tbsp butter
- 1 medium brown onion
- 2 cloves garlic, minced
- 1 large carrot, finely diced
- 400 g chicken mince
- 3 tbsp plain flour
- 1 cup chicken stock
- ¼ cup milk
- ½ cup peas
- ½ cup corn kernels
- 1 tsp fresh thyme, or ½ tsp dried thyme
- Pinch of salt
- ¼ tsp black pepper
- 3 cups mashed potatoes
- 60 g cheddar cheese, grated
How do I make it?
- Preheat oven to 180C.
- Heat butter in a large saucepan over medium-high heat. Add onion, garlic, and carrot and sauté until tender, stirring frequently. Add chicken mince and cook until the mince is cooked through. Sprinkle in flour and stir well, then add chicken stock and milk and stir with a wooden spoon until a creamy sauce develops.
- Remove from heat and toss in peas, corn, thyme, salt, and pepper and mix to combine.
- Pour mixture into a casserole dish and spoon mashed potato over the top. Sprinkle with cheddar and bake, uncovered for 30 minutes, or until the sauce is bubbling and the cheese is melted.
