Pretzel Crusted Gummy Flake
The salty crunch of pretzels is the perfect coating for plump fillets of gummy flake. Combine with a fresh salad for a delicious dinner.

What do I need?
- ½ cup plain flour
- Pinch of freshly ground black pepper
- 2 eggs
- 1 ½ cup finely crushed pretzels
- 700 g gummy flake fillets
- Cooking spray
How do I make it?
- Preheat oven to 200C. Line a large baking tray with baking paper.
- Combine flour and pepper in a shallow bowl.
- Lightly beat eggs in a second shallow bowl.
- Pour crushed pretzels into a third shallow bowl.
- Coat gummy fillets in flour, shaking off any excess. Dip each piece in egg and let any excess drip off. Finally coat each fillet with the pretzels and then place on the prepared baking tray.
- Lightly spray each piece of fish with cooking spray, then bake in the oven for 8 minutes, then turn and cook for a further 6-8 minutes or until the fish is cooked through and the coating is a rich golden brown.
