Corned Beef Hash

What do I need?
- 500 g potatoes, peeled and diced
- 1 ½ tbsp olive oil
- ½ tsp dried thyme
- ½ tsp dried oregano
- ½ tsp dried basil
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 brown onion, diced
- 2 cups roughly chopped leftover corned beef
- 2 tsp Worcestershire Sauce
- 2 tsp wholegrain mustard
- Fresh parsley leaves, diced, to garnish
How do I make it?
- Preheat oven to 200C.
- Add potatoes to a large bowl with olive oil, thyme, oregano, basil, salt, and pepper. Toss to combine, then tip into a baking pan. Cook, for 15 - 20 minutes or until golden and crisp, then set aside.
- Melt butter in a large frying pan over medium high heat. Add garlic and onion and cook, stirring, until the onions are soft. Add corned beef, and cook for 2 minutes, then toss in potatoes, Worcestershire Sauce, and mustard and toss. Cook, stirring for a further 2 minutes, then serve garnished with parsley.
