Tangelo and tarragon stuffed chicken breasts
Tuck tangelo slices and tarragon sprigs into chicken breasts before baking. The tangelo slices baste the chicken breasts with their sweet-tart citrus juices and the tarragon adds a subtle hint of anise-like flavour.

What do I need?
- 4 chicken breasts
- 8 tangelo slices
- 4 sprigs tarragon
- 2 tbsp softened unsalted butter
- Sea salt
- Freshly ground pepper
How do I make it?
- Cut a small pocked in each chicken breast. Stuff 2 tangelo slices and 1 tarragon sprig in each breast.
- Brush breasts with ½ tbsp. butter. Season with salt and pepper.
- Roast until cooked through, 30 to 35 minutes.
