Wholegrain Mustard and Maple Glazed Ham
The ham is always a focal point of Christmas, and this golden, glistening glaze elevates it to delicious new heights.
How long will it take?
2 hours
What’s the serving size?
This will glaze a ham up to 8kg
What do I need?
- 100 g maple syrup
- 50 g brown sugar
- 1 tbsp Worcestershire sauce
- 4 tbsp wholegrain mustard
- 1 leg ham (up to 8kg)
How do I make it?
- Preheat oven to 160C.
- Using a sharp knife, score the ham fat (not the flesh) at two-centimetre intervals into a honeycomb pattern. Insert a clove into each diamond of fat. Wrap the ham hock with foil (this prevents it from burning).
- Make glaze by combining maple syrup, brown sugar, and Worcestershire sauce in a small saucepan over low heat. Stir for 2-3 minutes, or until the brown sugar dissolves. Remove from heat and stir in wholegrain mustard.
- Brush ham with half the glaze and bake for 1 hour and 20 minutes. Increase oven temperature to 180C. Brush ham with remaining glaze and cook for a further 15 minutes or until golden. Cover loosely with foil and set aside to rest for 20 minutes before carving.
