
Cheesy Chicken with Bacon and Mushrooms
It may look like a hot mess, but this chicken is irresistibly delicious. Chicken breasts are smothered in a honey mustard sauce then topped with bacon, mushrooms and cheese and baked in the oven. The result is a thoroughly moreish dinner that the whole family will love.

What do I need?
- 1 tbsp olive oil
- 1 cup mushrooms, chopped
- 4 chicken breasts
- 1/3 cup mayonnaise
- 1 tbsp honey
- 2 tsp wholegrain mustard
- 4 slices of bacon
- 2 cups grated mozzarella
How do I make it?
- Preheat oven to 180C.
- Heat olive oil in a frying pan over medium heat. Add mushrooms and cook for 2 -3 minutes, stirring often.
- Remove mushrooms from the pan and set aside. Add remaining olive oil to the pan and then add chicken breasts. Brown chicken on both sides, then transfer it to a casserole dish.
- Combine mayonnaise, honey and mustard in a small bowl, then spread the sauce over the chicken. Arrange mushrooms and bacon on top of the chicken, then sprinkle with grated mozzarella.
- Bake for 25 – 30 minutes or until the chicken is cooked through.
- Serve with salad or vegetables.
