Cheesy Chicken with Bacon and Mushrooms

It may look like a hot mess, but this chicken is irresistibly delicious. Chicken breasts are smothered in a honey mustard sauce then topped with bacon, mushrooms and cheese and baked in the oven. The result is a thoroughly moreish dinner that the whole family will love.

What do I need?

  • 1 tbsp olive oil
  • 1 cup mushrooms, chopped
  • 4 chicken breasts
  • 1/3 cup mayonnaise
  • 1 tbsp honey
  • 2 tsp wholegrain mustard
  • 4 slices of bacon
  • 2 cups grated mozzarella

How do I make it?

  1. Preheat oven to 180C.
  2. Heat olive oil in a frying pan over medium heat. Add mushrooms and cook for 2 -3 minutes, stirring often.
  3. Remove mushrooms from the pan and set aside. Add remaining olive oil to the pan and then add chicken breasts. Brown chicken on both sides, then transfer it to a casserole dish.
  4. Combine mayonnaise, honey and mustard in a small bowl, then spread the sauce over the chicken. Arrange mushrooms and bacon on top of the chicken, then sprinkle with grated mozzarella.
  5. Bake for 25 – 30 minutes or until the chicken is cooked through.
  6. Serve with salad or vegetables.
