What do I need?

  • 1 ½ kg roasting potatoes, peeled and cut into large chunks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the toppings

  • 300 g beef mince
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp tomato paste
  • 6 rashers bacon, chopped
  • 100 g grated mozzarella
  • 50 g grated Pecorino
  • 150 mL sour cream
  • 2 spring onions, finely sliced

How do I make it?

  1. Preheat oven to 200C.
  2. Add potatoes, olive oil, garlic, salt and pepper to a large bowl and toss to coat. Tip potatoes into a roasting tray and arrange in a single layer. Cook for 35-40 minutes, or until the potatoes are golden and crispy.
  3. While potatoes are cooking, prepare the beef by heating a non-stick frying pan over medium-high heat. Add beef, paprika, cumin, salt, pepper, and tomato paste and cook until the beef is cooked through. Transfer to a plate and set aside.
  4. Wipe the frying pan with paper towel, then return to the heat and add the chopped bacon. Cook bacon until crisp, then drain on paper towel.
  5. To assemble the tray, spoon the beef mince and bacon evenly over the potatoes. Combine mozzarella and Millel Pecorino in a bowl and sprinkle over the top of the potatoes. Return to the oven for 5-7 minutes or until the cheese is melted and bubbling.
  6. Serve dolloped with sour cream and scattered with sliced spring onions.
