
Loaded Beef & Bacon Roasties

What do I need?
- 1 ½ kg roasting potatoes, peeled and cut into large chunks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Freshly ground black pepper, to taste
For the toppings
- 300 g beef mince
- 1 tsp smoked paprika
- ½ tsp ground cumin
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tbsp tomato paste
- 6 rashers bacon, chopped
- 100 g grated mozzarella
- 50 g grated Pecorino
- 150 mL sour cream
- 2 spring onions, finely sliced
How do I make it?
- Preheat oven to 200C.
- Add potatoes, olive oil, garlic, salt and pepper to a large bowl and toss to coat. Tip potatoes into a roasting tray and arrange in a single layer. Cook for 35-40 minutes, or until the potatoes are golden and crispy.
- While potatoes are cooking, prepare the beef by heating a non-stick frying pan over medium-high heat. Add beef, paprika, cumin, salt, pepper, and tomato paste and cook until the beef is cooked through. Transfer to a plate and set aside.
- Wipe the frying pan with paper towel, then return to the heat and add the chopped bacon. Cook bacon until crisp, then drain on paper towel.
- To assemble the tray, spoon the beef mince and bacon evenly over the potatoes. Combine mozzarella and Millel Pecorino in a bowl and sprinkle over the top of the potatoes. Return to the oven for 5-7 minutes or until the cheese is melted and bubbling.
- Serve dolloped with sour cream and scattered with sliced spring onions.
