Sausage and Veg Traybake
This is a great end-of-week dish to use up all of the bits and pieces of vegetables in the fridge or pantry, just chop up what you’ve got and add to the tray with your favourite type of sausages for one of the easiest dinners you’ll ever make.

What do I need?
- 8 sausages, cut into bite-sized pieces
- 2 potatoes, peeled and chopped into bite-sized pieces
- 2 carrots, peeled and chopped into bite-sized pieces
- 1 small sweet potato, peeled and chopped into bite-sized pieces
- 1 bunch asparagus, woody ends removed, chopped
- 6 Brussels sprouts, halved
- ¼ red capsicum, chopped into bite-sized pieces
- ¼ yellow capsicum, chopped into bite-sized pieces
- Handful of button mushrooms, chopped into bite-sized pieces
- 2 -3 tbsp olive oil
- Salt
- Freshly ground black pepper
- ¼ cup Worcestershire Sauce
How do I make it?
- Preheat oven to 180C.
- Add sausages and vegetables to a baking tray with the olive oil. Toss to coat all ingredients. Season with salt and pepper, then roast in the oven for 40 minutes, or until vegetables are cooked.
- Remove from oven and drizzle with Worcestershire Sauce. Toss again to distribute the sauce and then serve immediately.
