Beef Skewers with Satay Sauce
We do love a good satay sauce and this one is fab! Marinating the beef overnight will reward you with maximum flavour and provide the perfect tender beef base for your delicious homemade satay sauce.

What do I need?
For the marinade
½ cup coconut milk
2 tsp red curry paste
1 tsp brown sugar
1 tsp fish sauce
700 g diced beef
1 ½ tbsp vegetable oil
For the Satay Sauce
1 tbsp red curry paste
1 cup coconut milk
½ cup smooth peanut butter
2 tbsp caster sugar
2 tsp soy sauce
Pinch of salt
1 tbsp freshly squeezed lime juice
½ cup water
How do I make it?
Add coconut milk, curry paste, brown sugar and fish sauce to a bowl and mix to combine. Add beef to bowl and toss to coat with marinade. Cover with clingfilm and refrigerate overnight.
Meanwhile, make Satay Sauce by adding all ingredients to a saucepan over medium heat. Cook, stirring for 2 minutes, then reduce heat to a low simmer and stir occasionally while you cook the skewers. If sauce is too thick, add more water.
Thread beef pieces onto skewers. Heat oil in a large grill pan or frying pan over medium-high heat and cook skewers in batches until cooked through. Alternatively cook on the barbecue over medium heat.
Serve skewers with Satay Sauce poured over or in a dipping bowl if preferred.
