London Pork Sausages with Onion Gravy
Winter is all about comfort foods and there’s nothing more comforting than a traditional meal of sausages, mashed potato and homemade onion gravy.

What do I need?
- 1 tsp olive oil
- 8 London Pork Sausages
- 1 large brown onion, thinly sliced
- 1 clove garlic, minced
- 3 tbsp plain flour
- 2 cups beef stock
- Pinch of salt
- Pinch of freshly ground black pepper
How do I make it?
- Heat olive oil in a large frying pan over medium high heat. Add sausages and cook until cooked through and browned all over. Remove sausages from frying pan and set aside on a plate while you make the gravy.
- Reduce heat to medium and add onion and garlic to the frying pan and cook until the onion has softened and is starting to colour. Add plain flour and cook, stirring for 1 minute before adding a little of the stock to the pan. Continue stirring to form a paste, then add remaining stock and stir well.
- Bring mix to the boil, then immediately reduce heat to low and allow to simmer while you stir, until the gravy thickens. Season with salt and pepper and stir to combine.
- Return sausages to the pan to warm through, then serve sausages and gravy on a bed of mashed potato.
