Marry Me Chicken

What do I need?
- 4 chicken breasts, sliced into strips
- Pinch of salt
- Pinch of freshly ground black pepper
- 50 g plain flour
- 30 mL olive oil
- 30 g unsalted butter
- 3 cloves garlic, minced
- 250 mL chicken stock
- 250 mL cream
- 50 g parmesan, grated
- 1 tsp chilli flakes
- ¼ tsp dried oregano
- ¼ tsp dried thyme
- 1/3 cup sundried tomatoes, chopped
- 1 tbsp fresh basil leaves
How do I make it?
- Combine flour with salt and pepper. Dip chicken in flour mixture and shake off excess.
- Heat olive oil and butter in a large frying pan over medium heat. When butter has melted, add chicken in batches and cook for 5 minutes per side or until golden brown and cooked through. Remove from pan and set aside on a plate.
- Add garlic to pan and cook for 1 minute, then add chicken stock and reduce heat to medium-low. Pour in cream and stir to combine, then add parmesan. Let sauce simmer for 2 minutes before adding chilli flakes, thyme, and oregano. Add sundried tomatoes and stir. Return chicken to the frying pan and simmer it in the sauce for 2-3 minutes, or until warmed through.
- Garnish with basil leaves and serve with rice.
