Herbed Lemon Garlic Chicken
Baked in the oven, this chicken delivers crisp golden skin, and tender juicy meat. You can either use a whole chicken cut into pieces or buy your favourite cuts from the deli. Either way, you’ll have a delicious meal that the whole family will enjoy.

What do I need?
- 1 shallot, peeled and roughly chopped
- 4 cloves garlic, peeled and roughly chopped
- ¼ cup basil leaves
- ¼ cup coriander leaves
- ½ cup olive oil
- Juice of 2 lemons
- 1 tbsp apple cider vinegar
- Pinch of salt
- Pinch of freshly ground black pepper
- ½ tsp smoked paprika
- ¼ tsp ground cumin
- 8 skin-on chicken pieces of your choice - thighs, breast, drumsticks, wings
How do I make it?
- Add all ingredients except chicken pieces to a food processor and blitz until smooth.
- Pat the chicken pieces with paper towel to remove moisture and season chicken with salt and pepper.
- Add chicken to a casserole dish and pour over marinade. Turn chicken in the marinade to ensure it is well coated, then refrigerate for at least 30 minutes.
- Preheat oven to 180C.
- Line a baking dish with foil and baking paper and add a wire rack that has been lightly sprayed with cooking spray.
- Remove chicken from marinade and place skin side up on rack. Cook for 35 to 40 minutes, or until the chicken is cooked through. To crisp the skin place under the grill for a minute or two.
