What do I need?
- 2 cloves garlic, minced
- 1 tsp wholegrain mustard
- Pinch of salt
- 1 tbsp olive oil
- 1 tsp maple syrup
- 1 tbsp balsamic vinegar
- 500 g pork loin roast
- 5 rashers middle bacon
How do I make it?
- Preheat oven to 200C.
- Combine garlic, mustard, salt, olive oil, maple syrup, and balsamic vinegar in a bowl.
- Brush half the mixture over the pork loin, then wrap with bacon, overlapping them so that the pork is fully enclosed. Brush remaining mixture over the bacon.
- Cook for 35 minutes, then cook for 5 minutes under the grill to brown the bacon.
- Rest for 10 minutes, then slice and serve.
