Bacon Wrapped Stuffed Chicken Rolls
Filled with the classic combination of feta, garlic, and spinach these tender chicken breasts are a great option for entertaining. Serve them whole or sliced into rounds to show off their tasty filling.

What do I need?
- 1 tbsp olive oil
- 2 tsp minced garlic
- 180 g baby spinach
- ½ tsp thyme leaves
- 4 large chicken breasts, boneless and skinless
- 200 g feta, crumbled
- 1 cup grated cheddar
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 250 g streaky bacon
How do I make it?
- Preheat oven to 180C.
- Lightly spray a baking dish with cooking oil and set aside.
- Add olive oil to a frying pan over medium heat. Add garlic and cook for 1 minute, or until lightly golden. Add spinach and cook until wilted, then toss in thyme leaves and mix. Transfer to a bowl and set aside to cool for 10 minutes.
- Meanwhile, prepare chicken breasts by slicing carefully into the side of each breast about 1 centimetre from the top. Slice ¾ of the way through the breast to make a butterflied breast. Repeat for remaining breasts. Set aside.
- When spinach has cooled, add feta, cheddar, salt, and pepper, and mix well.
- Add a scoop of the spinach mixture to the centre of the chicken breast and then fold the other half over the top. Take a piece of bacon and place it underneath the thickest part of the chicken. Wrap the bacon around the chicken, adding extra slices to fully enclose the breast in bacon.
- Place wrapped breasts in prepared baking dish and bake for 55-60 minutes, or until the bacon is golden and the chicken is cooked through. Remove from oven and rest for 5 minutes before serving.
