Peanut Chicken with Spicy Lime Mango

What do I need?
- 750 g chicken breast, skinless, chopped
- 3 tbsp red curry paste, divided
- 1 tsp ginger, minced
- 3 tbsp olive oil, divided
- 400mL coconut milk
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- ¼ cup water
- ¼ cup basil, chopped
- ¼ cup coriander, chopped
- ½ cup peanut butter
- Juice of 1 lime
- ½ cup roasted peanuts
- Steamed rice, to serve
For the Spicy Lime Mango
- 1 mango, diced
- 1 red chilli, seeds removed, diced
- Juice and zest of 1 lime
How do I make it?
- Combine chicken with 2 tablespoons curry paste, ginger and 1 tablespoon olive oil in a large bowl. Cover and refrigerate for at least 10 minutes.
- Heat remaining 2 tablespoons olive oil in a large frying pan over medium-high heat. Add chicken and cook for 2 minutes, then add remaining curry paste and coconut milk. Reduce heat to low and add soy and fish sauces and water. Add basil and coriander and cook on a simmer for 20 minutes. Add peanut butter and lime juice and continue to simmer for a further 5 minutes.
- Make the Spicy Lime Mango by combining all ingredients in a bowl.
- Serve chicken over steamed rice. Top with roasted peanuts and Spicy Lime Mango.
