Lamb Steak Tray Bake
This one pan-wonder is full of fresh flavours and vibrant colours. It’s one of those great versatile dishes that means that you can add extra veggies to suit your taste.

What do I need?
- 4 tbsp olive oil, divided
- 1 tbsp lemon juice
- 2 garlic cloves, crushed
- 1 tsp dried mint
- 4 lamb leg steaks
- Salt and pepper
- 500g new potatoes, sliced
- 500g broad beans, skinned if you have time
- 8 shallots, halved
- 2 zucchini, cut into chunks
- 75ml white wine
How do I make it?
- Preheat oven to 200C.
- Make a marinade for the lamb steaks by mixing 2 tbsp olive oil, lemon juice, garlic and mint in a bowl. Season with salt and pepper and add lamb. Rub mixture into the lamb steaks. Set aside.
- Add potatoes, zucchini, shallots and beans to a large roasting pan. Drizzle with remaining 2 tbsp olive oil and wine. Cover pan with foil and cook in oven for 30 minutes. Remove foil and cook for a further 15 minutes.
- Increase heat to 220C. Place lamb steaks over the veggies and return to the oven for 10-15 minutes or until the lamb is cooked to your liking. Remove from oven, stand for 5 minutes and then serve.
