Spicy Lemongrass and Lime Prawns
Spice up your summer with these amazing prawns. Featuring lemongrass, lime, and chilli, they are just divine served with a chilled glass of wine and a fresh salad.

What do I need?
- 1 kg green prawns
- 1/3 cup olive oil
- 4 cloves garlic, thinly sliced
- 20 g piece lemongrass, finely chopped
- 1 birdseye chilli, finely chopped
- 1 tbsp finely grated lime rind
- Salt
- Freshly ground black pepper
- 2 limes, halved
How do I make it?
- Add prawns to a large bowl with olive oil, garlic, lemongrass, chilli, and lime rind. Toss to combine, then season with salt and pepper. Cover with clingfilm and refrigerate for 20 minutes to let the flavours develop.
- Preheat oven to 220C. Line a metal roasting dish with baking paper.
- Tip contents of bowl into the roasting dish, spreading them out evenly. Add lime halves and roast for 20 minutes, tossing halfway through cooking, or until prawns have turned pink in colour and are cooked through.
- Serve prawns drizzled with pan juices and the juice from the roasted limes.
