Truffle Tagliatelle
The thing about truffles is that they don’t need a lot of other ingredients to shine. Rather, a simple approach is best with a handful of ingredients that make the most of the unique truffle flavour. This Truffle Tagliatelle is easy to make, coming together in under 20 minutes, and is perfect for a special occasion.

What do I need?
- ½ tbsp salt
- 250 g tagliatelle
- 50 g unsalted butter
- 10 g finely shaved fresh truffle
- ¼ cup dry white wine
- 50 g parmesan, finely grated
How do I make it?
- Add a saucepan of water to the stove with ½ tablespoon salt. Bring water to the boil, then add tagliatelle and cook until al dente.
- Meanwhile, melt butter in a frying pan over low-medium heat. Add truffle and let sauté for a minute, then add wine.
- When tagliatelle is cooked, drain, and add to the frying pan. Toss pasta so that it is well covered by the butter and truffle mixture.
- Transfer to plates and add parmesan. Serve immediately.
