Nacho Casserole
You just know that the kids are going to love this concoction of meaty, cheesy goodness. It’s a cinch to make and is comfort food perfection.

What do I need?
- 1 tbsp olive oil
- 1 brown onion, chopped
- 500 g beef mince
- 300 g salsa
- 1 cup corn kernels
- 400 g red kidney beans
- 1 cup sour cream, plus extra for serving
- 2 cups crushed corn chips
- 1 ½ cups grated cheddar cheese, divided
- Spring onion, to serve
How do I make it?
- Preheat oven to 180C.
- Spray a casserole dish with cooking spray and set aside.
- Heat oil in a frying pan over medium-high heat. Add onion and cook for 2 minutes, then add beef mince and cook until cooked through, about 5 minutes. Add salsa, corn, beans and sour cream and cook, for 1 minute, stirring.
- Place half the mixture in the casserole dish and top with half the corn chips and half the grated cheese. Repeat layering with remaining beef mix, corn chips and cheese. Cook in oven for 20 minutes or until the casserole is heated through and the cheese has melted. Garnish with spring onion and serve with sour cream and guacamole if desired.
