Spiced Beef and Bean Burrito Bowl
Burrito bowls are uber popular and this one is simple to make and full of delicious spicy flavour. The beauty of this dish is that you can tailor it to suit your tastes. You can add extra toppings like carrot, corn or cheese and experiment with the level of heat by adding more chilli powder. And if you would prefer a vegetarian version you can use two cans of kidney beans and one can of tomatoes to replace the beef mince and use vegetable stock instead of chicken.

What do I need?
For the Spice Mix
- 3 tsp ground cumin
- 2 tsp ground paprika
- ½ tsp ground chilli powder
- ½ tsp dried oregano
- ½ tsp ground garlic powder
- ½ tsp ground onion powder
For the Spiced beef:
- 2 tbsp olive oil
- ½ brown onion, finely diced
- 2 cloves garlic, crushed
- 500g beef mince
- ¼ cup chicken stock
- 400g can red kidney beans, drained
- A pinch of sea salt
For the bowl:
- 4 cups cooked rice
- 2 avocados, halved and sliced
- Corn chips to serve
- Fresh coriander to serve
- Lemon wedges to serve
How do I make it?
- Start by making the spice mix by combining all ingredients in a small bowl. Set aside.
- Add olive oil to a frying pan over medium heat. Add brown onion and sea salt and cook until the onion is soft. Add garlic and spices and cook for about 1 ½ minutes before adding beef mince. Cook until the mince is brown and then add the chicken stock. Drop heat to low and continue cooking until most of the liquid is absorbed and then add beans. Stir to combine, taste and season if desired.
- To serve divide rice between four bowls, top with beef and bean mix, sliced avocado and corn chips. Serve with coriander and a lemon wedge.
