Coq au Vin Blanc (Chicken in white wine)
Coq au Vin is a traditional French dish in which the chicken is cooked in a rich red wine. Our version uses sauvignon blanc instead to create a more subtle flavour that allows all the ingredients to shine. Enjoy Coq au Vin with mashed potatoes and green beans or a crusty baguette.

What do I need?
- 115 g bacon, finely diced
- 1.25 kg assorted chicken pieces (bone in) – thighs, breasts and drumsticks. Alternatively you can buy a whole chicken and cut it into pieces
- Salt and freshly ground black pepper
- 2 tbsp olive oil
- 400 g button mushrooms, sliced
- 10 shallots, peeled
- 2 cloves garlic, minced
- 2 tbsp plain flour
- ¾ bottle sauvignon blanc
- 6 springs fresh thyme
- ½ cup chopped flat leaf parsley
How do I make it?
- In a large oven proof casserole dish or saucepan cook bacon over medium high heat until it starts to crisp. Remove from dish and set aside.
- Season the chicken all over with salt and pepper. Add olive oil to the dish and brown chicken for 4 minutes per side. Remove chicken from dish and set aside.
- Preheat oven to 180C.
- Add mushrooms to the casserole dish and cook over medium high heat. Brown mushrooms until they are a rich golden brown, then add the shallots and cook until the shallots have softened. Add garlic and cook for one minute, then add flour and stir to coat the mushrooms and shallots.
- Add wine and bring it to a simmer, then add thyme, half the parsley, the bacon and chicken. Cover with a lid and cook in the oven for 90 minutes or until the chicken is very tender.
- Sprinkle remaining parsley over chicken to serve.
