Salmon and Sweet Potato Patties
Your kids will love these easy to make patties that are filled with nutritious sweet potato and salmon.

What do I need?
- 2 cups sweet potato, chopped
- 1 x 415 g tin of pink salmon, drained
- 2 spring onions, finely chopped
- Zest of ½ lemon, finely grated
- 1 ½ cups breadcrumbs
- 1 egg, lightly beaten
- ¼ cup olive oil
How do I make it?
- Bring a large saucepan of water to the boil over medium-high heat. Add chopped sweet potato and cook until tender. Drain and set aside to cool slightly. Use a potato masher to roughly mash the sweet potato.
- Add salmon, spring onions, lemon zest, breadcrumbs and egg to a large bowl with mashed sweet potato and stir to combine.
- Form mixture into patties, then place them on a lined baking tray and refrigerate for 30 minutes before cooking.
- To cook, heat a couple of tablespoons of oil in a large non-stick frying pan over medium heat. Cook patties, in batches for 2-3 minutes per side, or until golden brown.
- Serve with vegetables or a salad.
