What do I need?

  • 1 medium onion, chopped
  • 3 spring onions, chopped
  • 2 birdseye chillis, chopped
  • 2 cloves garlic, chopped
  • 1 tbsp Chinese five spice
  • 1 tbsp allspice
  • 1 tbsp freshly ground black pepper
  • 1 tsp dried thyme leaves
  • 1 tsp ground nutmeg
  • 1 tsp salt
  • ½ cup soy sauce
  • 1 tbsp vegetable oil
  • 4 large chicken breasts, boneless

How do I make it?

  1. Add onion, spring onion, chillis, garlic, Chinese five spice, allspice, pepper, thyme leaves, nutmeg, and salt to a food processor and blitz to combine.
  2. Slowly drizzle in soy sauce and vegetable oil while the machine is running.
  3. Pour mixture into a shallow dish and add chicken breasts. Turn chicken breasts to coat in marinade, then cover and refrigerate overnight.
  4. Heat barbecue grill or a grill pan on the stovetop over medium-high heat. Add chicken and cook for 5 minutes per side or until cooked through. Serve immediately.
