Green Bean Casserole with Crispy Fried Onions
Green Bean Casserole is a staple for Thanksgiving in the USA. We just like it because it tastes good! This is a great option for a midweek meat-free meal because you can prepare everything in advance and just pop it in the oven when you get home.

What do I need?
- 750 g green beans, trimmed and halved
- 50 g unsalted butter
- 350 g mushrooms, roughly chopped
- ¾ tsp salt
- ¼ tsp freshly ground black pepper
- 1 clove garlic, minced
- 3 tbsp plain flour
- 375 mL vegetable stock
- 125 mL cream
For the Crispy Fried Onions
- 2 large red onions, peeled and thinly sliced into rings
- 1 ½ cups buttermilk
- 1 cup plain flour
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 3 cups vegetable oil, for frying

For the Crispy Fried Onions

- 1 ½ cups buttermilk
- 1 cup plain flour
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 3 cups vegetable oil, for frying
How do I make it?
- Bring a large pot of water to the boil and cook beans until just tender (about 3 minutes), then drain and rinse under cold water. Lay beans on a baking tray and pat dry with paper towel or a clean tea towel.
- Meanwhile, make the onions by adding onion rings and buttermilk to a bowl. Cover and refrigerate for 30 minutes. After 30 minutes, remove from the fridge and add oil to a saucepan. Heat oil to 180C.
- Combine flour, salt, pepper, garlic powder, and paprika in a shallow bowl. Remove onions from buttermilk and dredge them in the flour mixture. Fry onions in batches, for 5 minutes or until golden brown. Remove from oil and set on paper towels to drain.
- Make the casserole by melting butter in a frying pan over medium high heat. Add mushrooms and cook for 1 minute, then add salt, pepper and garlic and cook for a further 2-3 minutes. Reduce heat to medium and add flour, stirring until the flour has been incorporated. Continue stirring and pour in half the stock, then the cream and finish with remaining stock. Cook for 5 minutes, stirring often until sauce has thickened. Remove from heat and add beans. Stir to combine.
- Preheat oven to 180C.
- Pour bean mixture into a casserole dish and top with the fried onions. Bake for 10 to 15 minutes or until the casserole is piping hot.
