Homemade Slab Pizza with Pear and Cottage Cheese

This pizza base is generously thick offering the perfect base for the topping of ripe pears and creamy herbed cottage cheese. It’s a great option for lunch or dinner and any leftovers can be served cold or gently heated. If desired, you can finish your pizza with a drizzle of honey to complement the pears.

What do I need?

For the Pizza Dough

  • 1 tsp dry yeast
  • 1 tsp white sugar
  • 1 cup lukewarm water
  • 320 g plain flour
  • ¾ tsp salt
  • 1 tbsp olive oil

For the topping

  • 1 cup cottage cheese
  • 1 tbsp thyme leaves, roughly chopped
  • 3 pears, thinly sliced
  • Handful of rocket
  • Salt, to taste
  • Freshly cracked black pepper, to taste

How do I make it?

  1. Add yeast and sugar to a small bowl and pour over water. Set aside for 10 minutes.
  2. Sift flour into the bowl of an electric mixer. Add yeast mix and using dough hook, blend for 1 minute, then add salt and olive oil. Mix for 5 minutes or until the dough pulls away from the sides of the mixing bowl.
  3. Cover bowl with a tea towel and set aside in a warm place for 3-4 hours or until the dough doubles in size.
  4. Turn dough out onto a lightly floured surface and gently work it into a ball with your hands. Transfer the dough to a lightly greased 25 x 38-centimetre rectangular baking tray. Brush a thin layer of olive oil over the dough and leave to sit for 10 minutes.
  5. Use your fingers to work the dough into the shape of the pan. Allow the dough to rest for 30 minutes.
  6. Preheat oven to 220C.
  7. Add cottage cheese to a small bowl with thyme leaves and mix to combine.
  8. Sprinkle cottage cheese mixture over the dough, then top with sliced pears.
  9. Cook in oven for 25 minutes, or until the crust is golden, then add rocket and return to the oven for a further 5 minutes or until the rocket has wilted.
  10. Remove pizza from the oven and season to taste, then slice and serve.
