Avocado mango and walnut salad

Fabulous flavours and textures make this salad a winning combination. Serve as is or top with grilled salmon or chicken.

What do I need?

  • 1 large ripe mango, cubed
  • 1 avocado, thinly sliced
  • 8 cups of mixed lettuce, rocket and baby spinach
  • ¼ cup chopped walnuts
  • 60g soft goat cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Salt and pepper to taste

How do I make it?

  1. Whisk olive oil, honey, lemon juice, salt and pepper, and 1 tablespoon of finely chopped walnuts together to make the dressing. Set aside.
  2. Place lettuce on a large serving platter and top with thinly sliced avocado and mango cubes. Sprinkle with walnuts and crumble over goat cheese.
  3. Drizzle with dressing and serve.
