Quinoa and Cottage Cheese Salad

What do I need?
- ½ cup quinoa
- 200 g cottage cheese
- 150 g cherry tomatoes, halved
- 1 small cucumber, cut into rounds
- 250 g chickpeas, rinsed and drained
- 100 g pitted black olives
- Juice of 1 large lemon
- 40 mL olive oil
- 1 ½ tsp minced garlic
- 1 tbsp finely chopped mint leaves
- Salt
- Freshly ground black pepper
How do I make it?
- Add 1 cup of water to a small saucepan and set over high heat. Bring to the boil and then add quinoa. Cook for 10 minutes, then remove from the heat and drain water from quinoa. Set aside to cool.
- Add cottage cheese to cooled quinoa, then add in tomatoes, cucumber, chickpeas and olives and toss to combine.
- In a small bowl add lemon juice, olive oil, garlic, chopped mint and salt and pepper to taste. Whisk well to combine and then pour over salad ingredients. Toss again and serve.
