Mediterranean Bowl
Spring has arrived and we’re celebrating with a fresh and light bowl of Mediterranean favourites. This is a great meat-free lunch or dinner option that’s full of flavour and colour.

What do I need?
- 400 g can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 clove garlic, minced
- Pinch of cayenne pepper
- Pinch of salt
- 2 cups shredded lettuce
- 1 small Lebanese cucumber, sliced
- ½ punnet cherry tomatoes, halved
- ¼ red onion, sliced
- ½ cup green olives, pitted and halved
- ½ cup tzatziki
- Pita bread, to serve
How do I make it?
- Add chickpeas to a bowl with 1 tbsp olive oil, garlic, cayenne pepper, and salt and toss to coat.
- Cook chickpeas in a frying pan over medium heat, stirring frequently, until crispy and golden, about 8 minutes.
- Divide lettuce between 2 bowls. Top with chickpeas, cucumber, tomatoes, onion, and olives. Dollop on tzatziki and serve with pita bread.
