Broccoli and Rice Salad

A simple and nutritious salad that is the perfect accompaniment to your favourite protein, or equally as delicious as a stand-alone vegetarian dish.

Serves 4

What do I need?

  • 4 cups broccoli florets
  • 2/3 cup red rice
  • 2/3 cup white rice
  • 400 g tin chickpeas, drained and rinsed
  • 2 spring onions, finely chopped
  • ¼ cup sliced almonds, toasted
  • ¼ cup coriander leaves, chopped

For the dressing

  • Juice from ½ lemon
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 tsp soy sauce
  • 1 clove garlic, minced
  • Salt and pepper to taste

How do I make it?

  1. Cook rice according to packet directions and set aside to cool.
  2. Steam broccoli until tender, then add to a large bowl along with the remaining salad ingredients, including cooled rice.
  3. Whisk all the dressing ingredients together in a small bowl. Pour the dressing over the salad and toss well to coat. Taste and season if desired.
