Broccoli and Rice Salad
A simple and nutritious salad that is the perfect accompaniment to your favourite protein, or equally as delicious as a stand-alone vegetarian dish.

What do I need?
- 4 cups broccoli florets
- 2/3 cup red rice
- 2/3 cup white rice
- 400 g tin chickpeas, drained and rinsed
- 2 spring onions, finely chopped
- ¼ cup sliced almonds, toasted
- ¼ cup coriander leaves, chopped
For the dressing
- Juice from ½ lemon
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 2 tsp soy sauce
- 1 clove garlic, minced
- Salt and pepper to taste
How do I make it?
- Cook rice according to packet directions and set aside to cool.
- Steam broccoli until tender, then add to a large bowl along with the remaining salad ingredients, including cooled rice.
- Whisk all the dressing ingredients together in a small bowl. Pour the dressing over the salad and toss well to coat. Taste and season if desired.
