Zucchini Parmesan Chips

A healthy snack that the kids will love

What do I need?

  • ½ cup vegetable oil
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese grated
  • 2 zucchinis, thinly sliced to ½ centimetre rounds
  • 2 large free-range eggs, beaten

How do I make it?

  1. Heat vegetable oil in a large skillet pan over medium high heat
  2. In a large bowl, combine panko and parmesan and set aside
  3. Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in panko mixture and press to coat
  4. Add zucchini rounds to the pan 5 to 6 at a time and cook until evenly golden and crispy, about 1 minute per side. Transfer to a plate lined with paper towel.
  5. Serve hot immediately or allow to cool and have as a lunchbox treat
