Zucchini Parmesan Chips
A healthy snack that the kids will love

What do I need?
- ½ cup vegetable oil
- 1 cup panko breadcrumbs
- ½ cup Parmesan cheese grated
- 2 zucchinis, thinly sliced to ½ centimetre rounds
- 2 large free-range eggs, beaten
How do I make it?
- Heat vegetable oil in a large skillet pan over medium high heat
- In a large bowl, combine panko and parmesan and set aside
- Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in panko mixture and press to coat
- Add zucchini rounds to the pan 5 to 6 at a time and cook until evenly golden and crispy, about 1 minute per side. Transfer to a plate lined with paper towel.
- Serve hot immediately or allow to cool and have as a lunchbox treat
