Lemon, Garlic and Parmesan Roasted Asparagus
Fresh green asparagus spears gently roasted with the wonderful combination of lemon and garlic and dressed with a sprinkle of Parmesan.

What do I need?
- 3 bunches asparagus
- 2 tbsp olive oil
- 1 lemon, zested and then sliced
- 3 cloves garlic, sliced
- Salt and pepper to taste
- 2 tbsp Parmesan, finely grated
How do I make it?
- Preheat oven to 210C.
- Line a baking tray with baking paper.
- Trim asparagus to remove woody ends.
- Combine olive oil, garlic, lemon zest and salt and pepper in a large bowl. Add asparagus and toss to coat well. Tip contents of bowl on to baking tray and arrange asparagus in a single layer.
- Roast asparagus in oven for 15 – 20 minutes or until it is tender.
- Remove from oven, place on a serving platter and sprinkle with grated Parmesan to serve.
