Green Veggie Rolls
Yummy, cheesy and filled with veggies to fuel growing bodies and minds, these Green Veggie Rolls are perfect school lunch fare.

What do I need?
- 4 sheets frozen puff pastry
- 100g baby spinach, chopped
- 400g tin butter beans
- 100g zucchini, grated
- 50g cheddar cheese, grated
- 25g parmesan, grated
- 1 egg, separated
How do I make it?
- Preheat oven to 220C.
- Drain beans and add to a large bowl. Using a fork, squash the beans up a bit and then add spinach, zucchini, cheeses and egg yolk to the bowl.
- Lay out a sheet of the puff pastry onto a chopping board and spoon one quarter of the mixture onto a long edge of the pastry about 2.5 centimetres from the edge. Roll the pastry into a sausage-roll shape. Cut pastry into four small rolls. Repeat with remaining pastry sheets.
- Place rolls onto a lined baking tray, ensuring that the seam of the pastry is at the bottom. Brush the tops of the rolls with egg white and bake for 20 minutes or until golden.
