Crunchy Apple and Celery Slaw
We’ve taken the traditional Waldorf Salad and added our own twist to it with locally grown Tasmanian apples, creamy blue cheese and crème fraiche.

What do I need?
- 2 Tasmanian Royal Gala Apples, cored and julienned
- 1 cup celery, chopped
- 4 cups cabbage, shredded
- ½ cup walnuts, roughly chopped
- 1/3 cup raisins
- 60g blue cheese, crumbled
- 4 tbsp crème fraiche
- 4 tbsp lemon juice
- ½ tsp caster sugar
How do I make it?
- Make the dressing by whisking crème fraiche, lemon juice and caster sugar together in a bowl. Season and set aside.
- Combine remaining ingredients together in a large bowl and toss to combine.
- To serve, pour over dressing.
