Herby Macadamia Crumbed Salmon

What do I need?
- 1kg piece of salmon, pin-boned
- 2 tbsp Dijon mustard
- 2 cups macadamia nuts
- 1 bunch dill
- Salt and pepper
- 2 tbsp olive oil
- 2 lemons
How do I make it?
- Preheat oven to 180C.
- Line a baking tray with baking paper.
- Place salmon on tray, skin side down and brush with Dijon mustard.
- Blitz macadamia nuts roughly in a food processor then add ½ bunch of dill, a pinch of salt and a good grind of pepper and blitz again until the mixture resembles fine breadcrumbs.
- Press the macadamia mix over the salmon, completely covering it.
- Bake in the oven for 20-25 minutes or until the salmon is cooked through.
- Cut one lemon into wedges and set aside for serving.
- Juice the other lemon and combine the juice with the olive oil to make a dressing.
- Pour dressing over the fish as soon as you remove it from the oven.
- Serve with lemon wedges and remaining dill scattered over.
