Penne alla Vodka
Delicious flavour coats the penne in this pasta classic

What do I need?
- 3 tbsp olive oil
- 1 small brown onion, finely diced
- 4 cloves garlic, minced
- ½ tsp chilli flakes
- ½ cup tomato paste
- ½ cup vodka
- ½ cup cream
- ½ cup Parmesan, grated, plus extra to serve
- 400 g penne, or pasta of your choice
How do I make it?
- Heat a large frying pan over medium heat. Add olive oil and onion and cook until the onion has softened and is translucent. Add garlic and chilli flakes and cook for 1 minute. Add tomato paste and cook, stirring for 2 minutes before pouring in vodka. Cook, stirring for 1 minute, then add cream, stir and turn off heat.
- Meanwhile, bring a large pot of salted water to the boil and cook penne according to packet instructions. Drain and reserve 1 cup of pasta water.
- Return sauce to medium heat and add ½ cup reserved pasta water and stir through. Add Parmesan and continue stirring until it is fully incorporated. Tip in penne, and toss to coat in the sauce. Add more pasta water if needed to the sauce so that it is loose and glossy and coats the pasta.
- Season to taste and serve.
