Spaghetti Aglio E Olio
An Italian classic, the pasta is tossed in a sauce of garlic and olive oil. Deliciously simple, it allows the flavours to shine through and as an added bonus, it is super-fast to make so you can be tucking into it in less than 30 minutes.

What do I need?
- 450 g spaghetti
- Salt
- Freshly ground black pepper
- 1/3 cup good quality olive oil
- 5 garlic cloves, peeled and thinly sliced
- ¼ cup finely chopped flat-leaf parsley
- Parmesan cheese for serving, grated
How do I make it?
- Bring a large saucepan of water to the boil over medium-high heat. Add ½ teaspoon salt and the spaghetti. Cook according to the packet directions until al dente. Drain spaghetti, reserving ½ cup of the water and set aside.
- Heat oil in a large frying pan over medium heat. Add garlic slices and cook, stirring until the garlic is lightly browned, about 1 minute.
- Remove pan from heat and add spaghetti and parsley and toss to coat. Add some of the reserved pasta water and toss again. Season and serve with grated parmesan.
