Yellow watermelon, honey and basil sorbet
Yellow watermelon combines with basil and honey for a dessert that tastes fabulous but is amazingly simple to make.

What do I need?
- 4 cups yellow watermelon cubes
- ¼ cup fresh basil leaves
- 1/3 cup honey
- 3 tbsp lemon juice
How do I make it?
- Freeze cubed watermelon for 2 hours.
- Remove watermelon from freezer and add to a food processor with the other ingredients. Blitz until very smooth. The basil leaves will break down to very small pieces. Taste and add extra honey or lemon juice if desired.
- Place in an airtight container in the freezer for 2 hours and then remove and blitz again to remove any large ice crystals.
- Return to the freezer until ready to serve.
