Sticky caramelised pears and walnuts star in this simple but tasty dessert that’s just perfect for a Sunday night treat.

4 Packham Pears, halved and cored
½ cup brown sugar
¼ cup dark rum
3 tbsp lemon juice
3 tbsp butter
½ cup walnuts, roughly chopped
How do I make it?
Preheat oven to 200C.
Mix brown sugar, rum and lemon juice in a large bowl. Add pears and toss to coat with mixture.
Transfer pears cut side down to a large roasting pan or casserole dish, ensuring that they are in a single layer. Dot pears with butter.
Bake for 20 minutes then turn pears and scatter over walnuts. Use a spoon to ladle sauce from the pan over the pears and walnuts. Return to oven and cook for a further 10 minutes or until the pears are soft and caramelised. Remove from oven and serve with ice-cream and drizzle over sauce from the pan.
