Frozen White Christmas
A twist on the traditional favourite, our White Christmas is a frozen treat that’s just the thing for a warm Tasmanian summer.

Makes approximately 30 pieces
What do I need?
- 50 g roasted almonds, roughly chopped
- 50 g walnuts, roughly chopped
- 480 g Westhaven Coconut Yoghurt
- 150 g white chocolate, melted
- 1 cup rice bubbles
- 75 g sultanas
- 50 g dried cranberries
- 125 g fresh raspberries
- 125 g fresh strawberries, sliced
How do I make it?
Line a 30 x 20 centimetre baking tin with baking paper.
Melt chocolate in microwave in 30 second bursts. Allow to cool slightly, then fold in remaining ingredients.
Pour mix into the prepared pan and use a spoon to smooth the top.
Place in freezer for 3 hours or until set. Remove and slice into squares and keep squares in an airtight container in the freezer. Serve frozen.
