Lamington Macarons

What's better than a lamington? A Lamington Macaron!

What do I need?

  • 3 egg whites at room temperature
  • ¼ cup caster sugar
  • 1 ¼ cups pure icing sugar
  • 1 cup ground almond meal
  • 1 ½ tsp coconut essence

Decorating and Filling

  • 150g dark cooking chocolate
  • 20g copha
  • 1 ½ cups shredded coconut
  • 150ml thickened cream
  • 1 tbsp cocoa powder (sifted)

How do I make it?

  1. Preheat the oven to 145 degrees.
  2. Line baking tray with paper.
  3. In an electric mixer beat the egg whites until soft peaks form. Slowly add the caster sugar beating well in between each addition. Beat eggs whites for another 2 minutes on high.
  4. In a separate bowl add sifted icing sugar, almond meal and coconut essence. Gently fold the egg whites through this mixture.
  5. Place the mixture into a piping bag and pipe circles on the baking paper.
  6. Allow the macarons to stand for at least 20 mins prior to cooking.
  7. Cook the macarons for 15 mins.
  8. For the filling melt copha and chocolate in a bowl. Dip the cooled macaron in the chocolate and then sprinkle with shredded coconut.
  9. To serve, whip cream. Divide whipped cream between two bowls and sift cocoa powder into one to make chocolate cream. Pipe or spoon whipped cream onto macarons and sandwich two together.
