Lamington Macarons

What do I need?
- 3 egg whites at room temperature
- ¼ cup caster sugar
- 1 ¼ cups pure icing sugar
- 1 cup ground almond meal
- 1 ½ tsp coconut essence
Decorating and Filling
- 150g dark cooking chocolate
- 20g copha
- 1 ½ cups shredded coconut
- 150ml thickened cream
- 1 tbsp cocoa powder (sifted)
How do I make it?
- Preheat the oven to 145 degrees.
- Line baking tray with paper.
- In an electric mixer beat the egg whites until soft peaks form. Slowly add the caster sugar beating well in between each addition. Beat eggs whites for another 2 minutes on high.
- In a separate bowl add sifted icing sugar, almond meal and coconut essence. Gently fold the egg whites through this mixture.
- Place the mixture into a piping bag and pipe circles on the baking paper.
- Allow the macarons to stand for at least 20 mins prior to cooking.
- Cook the macarons for 15 mins.
- For the filling melt copha and chocolate in a bowl. Dip the cooled macaron in the chocolate and then sprinkle with shredded coconut.
- To serve, whip cream. Divide whipped cream between two bowls and sift cocoa powder into one to make chocolate cream. Pipe or spoon whipped cream onto macarons and sandwich two together.
